  • 1 can of Van O’tonno Tuna
  • Pita bread
  • 1/2 cup of raw rice, quinoa, or cooked rice with quinoa
  • 2 tbs of cream cheese
  • 1 tbs of baba ghanoush (eggplant preserve)
  • 1/4 T chopped chives
  • 1/4 T sliced mushrooms
  • 2 pickles sliced lengthwise
  • 3 lettuce leaves
  • 2 quartered cherry tomato
  • 4 carrot sticks

PREPARATION

Mix the baba ghanoush with the cream cheese and chives, spread it onto all the surface of the pita bread.

Continue with the rice, mushrooms, pickles and finally the tuna.

Roll up, wrap in paper, cut in half and serve with the lettuce, tomato and carrot salad.
